Ingredients:

  • 6 cups (850g) seedless watermelon, cubed into 1-inch pieces
  • 1 cup (150g) feta cheese, crumbled
  • 1/2 cup (15g) fresh mint leaves, torn
  • 1/4 cup (15g) red onion, thinly sliced
  • 2 tbsp (30ml) honey
  • 1 tbsp (15ml) fresh lime juice
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Dice the watermelon into uniform 1 inch cubes. Note: Consistency ensures every bite has the same flavor ratio.
  2. Thinly slice the red onion into half moons.
  3. Pour the honey and lime juice into a small bowl.
  4. Whisk in the sea salt and black pepper. Whisk for 30 seconds until the mixture is a glossy, pale gold liquid with no visible honey clumps.
  5. Dump the watermelon cubes, crumbled feta, and sliced onion into your large mixing bowl.
  6. Drizzle the gold glaze over the top of the mixture.
  7. Gently fold using a spatula. Fold 4-5 times until the fruit is coated but the feta hasn't completely smeared.
  8. Scatter the torn mint leaves on top of the salad. Note: Tearing by hand releases the oils better than chopping.
