Ingredients:
- 14.3 oz Oreo Cookies (1 standard package, regular stuf)
- 8 oz full-fat brick cream cheese, softened
- 1 pinch fine sea salt
- 12 oz white candy melts or white chocolate wafers
- 1 tsp coconut oil
- 2 tbsp red and blue sanding sugar or patriotic sprinkles
Instructions:
- Pulverize the cookies. Place the entire 14.3 oz of cookies into the food processor. Pulse until you see a fine, sandy texture with absolutely no large chunks remaining.
- Incorporate the binder. Add the 8 oz of softened cream cheese and the pinch of salt. Pulse until the mixture forms a cohesive ball that pulls away from the sides of the bowl.
- Shape the centers. Scoop 1 tablespoon portions and roll them into smooth spheres. Note: Warm hands can melt the fat, so work quickly to keep them round.
- Initial chill. Place the spheres on parchment paper and refrigerate for 30-45 minutes. Note: They should be firm to the touch but not frozen solid.
- Prepare the coating. Melt 12 oz of candy melts with 1 tsp coconut oil in the microwave. Heat in 30 second bursts, stirring until the mixture is completely smooth and glossy.
- Execute the dip. Using a fork or dipping tool, lower one truffle at a time into the coating. Note: Tap the fork against the side of the bowl to remove the excess.
- Apply the garnish. Place the dipped truffle back on the parchment and immediately add sprinkles before the shell sets.
- Final set. Return the tray to the fridge for at least 15 minutes until the shells are completely hard and matte. The trickiest part is definitely the dipping. If your centers are too warm, they will start to melt into the white coating, turning it a muddy grey. If they are too cold (like from the freezer), the white chocolate will seize up and crack as it expands. That 30-45 minute window in the fridge is the sweet spot. When you're dipping, think of it as a gentle bath, not a deep sea dive.
