Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1/2-inch strips
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large orange bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 packet (1 ounce/28g) fajita seasoning mix
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)
  • 12-18 small flour tortillas (6-inch diameter)
  • Salsa
  • Guacamole
  • Sour cream or Greek yogurt
  • Shredded cheese (Cheddar, Monterey Jack, or a Mexican blend)

Instructions:

  1. Slice the chicken into strips. Slice the bell peppers and onion.
  2. In a large bowl, toss the chicken, bell peppers, and onion with olive oil, fajita seasoning, and lime juice. Ensure everything is well coated.
  3. Spread the chicken and vegetable mixture in a single layer on the prepared baking sheet. Avoid overcrowding.
  4. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. The internal temperature of the chicken should reach 165°F (74°C).
  5. While the fajitas are baking, warm the tortillas according to package instructions (microwave, dry skillet, or oven).
  6. Serve the chicken and vegetable mixture in warmed tortillas with your favorite toppings like salsa, guacamole, sour cream, and cheese. Garnish with fresh cilantro.
