- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1/2-inch strips
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large orange bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 packet (1 ounce/28g) fajita seasoning mix
- 1 lime, juiced
- Fresh cilantro, chopped (for garnish)
- 12-18 small flour tortillas (6-inch diameter)
- Salsa
- Guacamole
- Sour cream or Greek yogurt
- Shredded cheese (Cheddar, Monterey Jack, or a Mexican blend)
Instructions:
- Slice the chicken into strips. Slice the bell peppers and onion.
- In a large bowl, toss the chicken, bell peppers, and onion with olive oil, fajita seasoning, and lime juice. Ensure everything is well coated.
- Spread the chicken and vegetable mixture in a single layer on the prepared baking sheet. Avoid overcrowding.
- Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. The internal temperature of the chicken should reach 165°F (74°C).
- While the fajitas are baking, warm the tortillas according to package instructions (microwave, dry skillet, or oven).
- Serve the chicken and vegetable mixture in warmed tortillas with your favorite toppings like salsa, guacamole, sour cream, and cheese. Garnish with fresh cilantro.
