This simple smoked sausage and potato bake packs tons of flavor despite the simple 3 main ingredients.
I knew I’d love this simple meal when I ran across the recipe on Pinterest. The original recipe comes from Recipes from the Big Blue Binder.
The reason I knew I’d like this is my mom used to do something very similar to Italian sausage. In fact, Mom’s Sausage & Potato Bake was one of the first recipes I posted on this blog!
The only real adjustments I made to the original recipe were the seasonings. Where I like the herbs she used, I wasn’t sure if I’d like them in this so I went with something a little more subtle.
This is quick and easy. It’s very long on flavor too, thanks to the smoked sausage.
To Make this Recipe You’Il Need the following ingredients:
Smoked Sausage and Potato Bake Recipe
1 package of sliced Eckrich skinless smoked sausage.
8 quartered Yukon gold potatoes.
1 diced green pepper.
1 diced yellow pepper.
2 tbsps of butter.
1 tsp of oregano.
1 tsp of basil.
½ tsp of black pepper.
2 tsps of olive oil.
How to MAKE:
Preheat the oven to 375°.
In a pan, arrange the sausage, potatoes and peppers and place the butter over the top in small cubes. Drizzle with olive oil and season on top.
Bake covered for 40 to 50 minutes.
Simple, easy and yummy! I sometimes make this with veggies, carrots, zucchini, broccoli and some cheese over the top, it goes really well with the seasonings. I don’t love sausage very much so I make this with ham! Give it a try, you will love it!
